Croustades are cheap and good to fall back on; they suit as a starter and as an evening dish. They can be cooked and kept until you need them.
The batter consists of milk, egg yolk, a pinch of salt, a little grated lemon zest and flour. If the batter is too thick, add a little cold water.
Fill them with either fish balls, stewed lobster, meatballs in mushroom sauce, or a dish of leftovers of either fowl or roast.
