Scrape or mince the meat and put it in a bottle or a wide-mouthed jar together with the salt and the cold water. Set a plug of cotton wool in the jar.
Set this in a pot of cold water, filled so the water comes halfway up the jar, and let the pot simmer gently for half an hour.
So the jar does not break while it boils and jostles, place a little hay or a piece of cloth in the bottom of the pot.
Strain the beef tea, pressing a little on the meat. It becomes strong but cloudy, which is why it is best served in red glasses, so the invalid does not find it unappetizing.
