For a cask of 40 litres, take 12 litres of well and long boiled, thick rye-flour gruel, which is poured warm into the cask.
The cask is filled up with lukewarm water and left to stand for some time to cool.
While it is still not quite cold, a little yeast is added, after which the cask is stoppered well and tightly and shaken somewhat to promote fermentation.
Now the cask must lie still and unopened for 3 days and nights. With that the kalja is ready.
