The cleaned, drawn, washed fowl is boiled together with a piece of lightly brine-cured pork.
If it is a large fowl, such as capercaillie, the breast is usually used as a roast, and soup is made from the back and wings as well as the giblets.
Ptarmigan should be divided in two when boiled. Mashed potatoes with it.
If small birds are boiled, the pork must boil for 0.75 hour before the birds are put in.
