The meat is cut into slices and well pounded. On each slice of meat place a dessertspoon of meat farce, over this sprinkle the finely chopped parsley, pepper, salt and the finely chopped celeriac, which has first been given a quick boil in boiling water.
The pieces are rolled up and tied with string.
The butter is half-browned in the pan, the meat is browned in it, the water is poured on, and the meat simmers gently in it until tender, about 0.5 hour.
Remove the string, cut the roulades into slices on the diagonal, and serve on a flat dish with the sauce around them.
Sauce: Brown the butter, stir in the flour, thin with the strained stock, add cream, cayenne and sugar, and simmer gently for 5 min. Take off the heat, stir in the wine and salt to taste.
