The meat is chopped up and washed. Swede and potatoes are cut into small pieces.
Flour, salt and pepper are mixed together.
In the bottom of the pot lay a small piece of fat or butter, then meat, swede and potatoes in layers, sprinkling the prepared flour and salt between each layer until everything is packed in.
Pour on water — no more than just enough to see it. Put a tight lid on the pot.
It may well come to a boil quickly, but afterwards it must simmer quite quietly over gentle heat. It must not be stirred.
The dish is usually ready in 1.5 to 2 hours and is enough for 10 to 12 people. It can also be made with a little salted veal, mutton or beef.
