The goose is rubbed well with pepper and salt, outside and inside, after which it is stuffed with cut-up apples and pitted prunes. Before this is put in, you can press grated white bread firmly in against the sides.
The oven must be very hot, so the goose can brown quickly; it must be basted diligently and watched closely so it does not burn.
For the last quarter hour the oven door should stand open; the goose then gets a crisper crust.
Before it is plated, take a linen cloth, dip it in melted butter or oil and brush the goose over; it then gets a glistening exterior.
The sauce is skimmed of fat, strained into a saucepan, and red wine and the previously boiled-tender chestnut kernels are added; taste whether it is properly salted and add a teaspoon of sugar.
