The tongue is washed well and laid in water from one day to the next.
Put over the fire with enough boiling water to stand above it, a little salt, 1 coarsely cut onion, 1 teaspoon whole white pepper and a piece of ginger.
When it is cooked, skin it and cut it crosswise into slices 1 centimetre thick.
The pieces are dipped in egg and crushed rusks, in which a little ground pepper and salt have been mixed, and browned in butter.
In the butter in which the tongue was browned, put 1 heaped teaspoon wheat flour and thin with a little of the stock in which the tongue was boiled, add 1 small box of mushrooms and a little Madeira to taste.
The tongue is laid neatly on a flat dish, and the sauce is poured over.
