From a lean pork shoulder cut away the rind and at least half of the fat. This is set aside, preferably in a linen bag, so it can hang outdoors in fresh air, giving you something to lard fowl and game meat with.
The bone is carefully cut out of the shoulder, and where the bone was you fill with pitted, washed prunes and sliced apple pieces. Sew the opening shut and rub the roast with pepper and salt.
Brown in its own fat, pour on water, and lay the washed apple peel in it; this gives the sauce a fine flavour.
This roast needs 2 to 3.5 hours of roasting. The sauce is strained and 0.5 teaspoon mustard, 0.5 teaspoon sugar and 1 dl. cider are added.
