The shoulder is cut into suitable pieces after the outer membrane has been flaked off, washed, dried, rolled in flour, and browned in good cooking fat.
Place in a casserole with a tight-fitting lid, pour over water, a child's spoon of salt, 3–4 whole cloves, and a salted and soaked piece of pork with as little fat and as much meat on it as possible.
You must allow 2½ to 3 hours if it is meat from an older animal.
Taste the sauce to see whether more salt should be added.
