2 sets of veal sweetbreads (about 1 kg.) are boiled in the usual way with a bay leaf, a couple of onions and a few whole peppercorns in the water.
Remove the membrane and chop them finely.
Chop a small shallot and a little parsley very finely and mix them in.
125 gr. of white bread without crust is cut into thick slices, dipped in milk and left to stand a little; most of the milk is pressed out, the bread is crushed with a spoon and cooked together with about 60 gr. butter or margarine until it comes away from the pan.
Then stir in six egg yolks, one at a time, and mix with the chopped sweetbreads; finally fold in the stiffly beaten whites.
Fill the batter into shells or paper cases that are not too small, filling them only halfway.
Smooth the batter on top, brush with butter and sprinkle with fine breadcrumbs.
Bake the shells for 20 minutes in a hot oven.
If desired, chopped mushrooms can be mixed into the batter. This makes 12 shells.
The batter can also be baked in an ordinary gratin dish, and as the gratin is served, pour over either a tomato sauce made with strong meat gravy, or lightly browned butter with coarsely chopped mushrooms in it.
