4 good veal tongues are boiled in water with salt, a cut-up carrot, a shallot and a few whole peppercorns.
When the tongues are cooked, cooled and the skin peeled off, cut them lengthwise into slices, dip them in egg and then in finely crushed bread, after which fry the slices in the pan in butter.
Before frying them, you must have made a mock mayonnaise of 40—50 gr. butter, cooked with 40 gr. flour and thinned with broth into a thick sauce, then bound with 4 egg yolks and poured into a small shallow bowl.
You must stir it until it is cold, then add 2 dessertspoons of oil, a small spoonful of tarragon vinegar and ground white pepper as well as salt.
On the warm dish place a small, low ring mould filled with the mayonnaise; around it arrange the fried tongue slices.
