Original 1941 recipe
Verbatim from "Good, cheap daily fare" (1941) – frugal wartime cooking.

Soaked and cleaned offal is ground twice with salt, flour, onion and boiled potatoes, seasoned with pepper and ginger, adjusted with crushed dry bread, shaped into cakes and fried in fat. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Prepare the offal
Cut up the soaked, cleaned, sliced and dried offal; the fat may be left in.
Grind twice
Grind the offal twice together with the salt, flour, onion and potatoes.
Adjust the consistency
Thin with liquid if the mixture is too firm; if it is loose, add crushed or ground dry bread.
Season and fry
Add the spices and work everything together. Shape into cakes and fry in fat.
