Original 1941 recipe

Ground beef worked with beaten egg is shaped into thick patties, dusted with seasoned flour, chilled, then browned and finished in a hot oven topped with browned onion, served with steamed spinach. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Mix the mince
Work the minced meat together with the beaten egg and season to taste.
Shape and chill
Shape the mixture into thick cakes and dust them with a mixture of flour, salt and pepper. Set them in a cold place for 1 hour.
Brown the cakes and onion
Slice the onion and brown it. Brown the cakes and place them on a warm, ovenproof dish. Put a very small knob of butter on each, and spread the browned onion on top of the patties.
Finish in the oven
Put the dish in a hot oven for 5–6 minutes. Whisk up the pan juices with a little stock or potato water.
Serve with greens
Serve with steamed spinach. Melt a little fat in the pot, add the cleaned spinach and steam covered for 5 minutes. Kale and chard are prepared the same way. Sprinkle with a little salt and pepper.
