Cut the rabbit into not too large pieces; cut up the onion and brown it in a spoonful of fat, take it out when it is done browning, and brown the meat in the same fat, placing it piece by piece into a pot; add the onion, the spices, and about 1 liter of boiling water.
Let everything simmer for 1½ hours, or until the meat is tender.
Cut the carrots into not too fine strips, brown them in a little fat, and cook them done in a little of the stock.
When the meat is done, strain off the liquid, skim off a little fat, and in this soak the bread that has been in water for a moment — or rub the boiled potatoes with the fat, thin with the stock, strain it all if necessary, and let simmer for 10 minutes.
Place the meat and vegetables in a dish, or preferably leave them in the pot they were cooked in, and pour the sauce over. Let the sauce be well seasoned.
