Grind the liver or scraps, curd, the boiled potatoes, salt, and the cut-up onion once in a meat grinder, stir together quickly, add the lightly beaten egg and pepper, and salt to taste.
Form the dough into cakes that are fried in cooking fat or butter.
When they are nicely brown, you can pour a little stock or soured cream-milk over them and let them simmer gently for 5 minutes.
Serve with potatoes — preferably fried — and vegetables.
