Original 1941 recipe

The skinned, opened, cleaned, and washed rabbit is cut into fairly large pieces, which are put over the heat in boiling, salted water, just enough to cover them.
When the meat is half-cooked, add cleaned, finely cut-up Jerusalem artichokes or celeriac; these cook along for about 20 minutes, are taken out, pressed fine, and enough of the stock is added until the sauce is suitably thick.
Pepper and salt to taste, and if you have it, a couple of spoonfuls of cream.
By using this method you have no need of butter or flour for sauce that day.
Of course, this method can be used for other meat and fish dishes.
