Original 1941 recipe

Wash the hen, dry it, and cut it into suitable pieces; cook it in the fat and about ¾ liter of water without browning; steam until tender.
Blanch the spinach in its own water after it has been washed, if it is fresh spinach; chop it coarsely, add a little parsley, chives, and thyme, and thin with a little of the stock to a smooth, or rather thick, sauce.
Cover the hen with this sauce. Serve with tomatoes and fried potatoes.
The hen may be so fat that you can leave out the butter; indeed, in some chicken dishes you can leave out both butter and pork or bacon, but you don't come across those every day.
