The fish is scraped, cleaned and freed of slime; this is best done by letting it lie in salt water with a little vinegar in it.
The head is cut off above the eyes, the fins trimmed. The fish is cut into pieces about two fingers wide across, or the flounder may be cut so that you get triangular pointed pieces, then placed in the boiling, salted water.
Serve with whipped butter, preferably with capers in it. Garnish the dish with parsley and lemon slices.
