Pike is served poached with parsley butter; or it is salted for 2 days and smoked. It is then boiled and served with boiled carrots and parsley butter.
Pike is excellent for fish forcemeat. All freshwater fish should be washed in a little vinegar water and cooked with a little vinegar in the water. 1 tablespoon vinegar to 1 l water.
Pike can be skinned and roasted like a veal roast in the oven.
