Poached flounder from Erken and Steen's school cookbook of 1900: flounder cleaned and freed of slime by soaking in salted water with vinegar, head and fins cut off, cut into pieces and poached in salted water, served with melted butter and capers if you like.

Clean the fish
Scrape and clean the flounder and remove the slime. This is best done by letting the fish sit for a while in salted water with a little vinegar added.
Prepare
Cut off the head above the eyes and snip off the fins. Cut the fish into suitable pieces.
Poach
Put the pieces into the boiling, salted water and let the fish finish poaching.
Serve
Serve the poached flounder with melted butter, ideally with capers in it.
