Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Fish pudding of finely chopped klippfisk stirred into a thick butter, flour and milk base, lightened with 8 eggs, cooked for 2 hours in a mould and served with egg butter.

En luftig fiskepudding av utvannet klippfisk, laget på en tykk melkejevning med separat innvendte eggeplommer og stivpisket eggehvite. En måte å bruke opp restklippfisk på.
Make a roux base
Melt the butter, stir in the flour and add the milk little by little. Bring it to the boil and add the finely chopped fish.
Fold in the eggs
Let the mixture cool. Add the 8 beaten egg yolks, salt to taste and mace. Finally, fold in the stiffly beaten egg whites gently.
Cook the pudding
Fill into a greased and dusted mould and cook for 2 hours (in a water bath).
Serve
Serve with melted butter with finely chopped hard-boiled egg.
