Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Poached salmon from Kogebog for skole og hjem (1900): the fish is cleaned, cut into slices or poached whole and cooked in salted water for 0.5-1 hour. Served warm with parsley butter, hollandaise or caper sauce; cold with horseradish sauce. The stock is used for fish soup.

Enkel kokt laks slik den ble servert i norske skole- og hjemshusholdninger rundt 1900. Oppskriften viser tidens tre klassiske sauser til fisk: persillesmør, hollandaise og kaperssaus, og at intet gikk til spille — kraften ble til suppe.
Clean the fish
Scrape and clean the salmon, and wash it well in several changes of cold water. Sprinkle a little salt over it.
Cut up
Cut the salmon into slices, or leave it whole if you want to cook it in one piece.
Cook the fish
Put the slices into boiling, salted water. A whole salmon is put into water that is barely simmering (almost boiling) and left to poach for half an hour to an hour, depending on the size.
Serve
Serve with melted parsley butter, hollandaise or caper sauce. Cold poached salmon is served with horseradish sauce. Use the fish stock for fish soup.
