Original 1900 recipe

Halibut slices poached in fish stock, served in a curry sauce thickened with butter and flour and rounded off with egg yolk and cream.

Kveite i karrisaus vitner om hvordan karri («carry») fant veien inn i norske kjøkken rundt 1900. Sausen tyknes med en mel-smør-jevning og avrundes med eggeplomme og fløte.
Boil stock
Remove the skin and bones, cut the halibut into finger-thick slices. Put the skin and bones into cold, salted water and boil for half an hour. Strain the stock.
Poach the fish
Put the stock back on. When it boils, add the fish and let it poach slowly until firm and white.
Make curry sauce
Melt the butter, stir in the flour and curry, add the strained fish stock and bring it to the boil. Take off the heat and add the egg yolk stirred into the cream.
