Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Halibut cut into finger-thick slices, poached slowly tender in salted water (optionally half milk), served with parsley butter, hollandaise or caper sauce.

Kokt kveite («hellefisk») var en festlig middagsfisk. Erken og Steen gir råd om å koke i melkeblanding for hvitere kjøtt – et vanlig triks i tiden.
Cut the fish
Cut the halibut from the bone into finger-thick slices and wipe with a damp cloth.
Bring to the boil
Put the fish into boiling, salted water. Skim well when it boils.
Poach until tender
Let the fish poach slowly until tender. If it is not entirely white, it can be cooked in half milk and half water for a finer appearance.
Serve
Serve with melted butter with finely chopped parsley, hollandaise sauce or caper sauce.
