The cleaned, washed, dried fish is cut away from skin and bones and scraped quite fine from the tail upwards. Haddock, saithe or cod should be used.
Melt the butter, stir in the flour, thin little by little with the milk, bring to a boil; cool, add the finely mashed fish little by little, the nutmeg, the egg yolks, the stiffly whisked egg whites, the wine and salt to taste.
Put in a greased and crumb-coated mould; sprinkle over with finely ground rusk and bake in the oven ½–¾ hour. — Serve in the mould.
Make stock from the fish bones and skin; put everything over the heat with just enough cold water to cover it; 1 heaped teaspoon of salt per litre of water.
