The fish is cut into slices — without bones and skin — dried in a fish cloth after being quickly washed, turned in egg and rusk crumbs, fried quite slowly in butter in a pan until the fish is light brown, and cooled.
The bones and skin are washed and cooked into stock; the stock and the wine are mixed, and in this mixture the fried fish is given a quick boil.
The sauce, which should be thick, is given a little pounded rusk, salt to taste, boiled down and poured over the fish.
