The well-washed offal — put it in a strainer and rinse it under the tap — is put over the heat in boiling salted water — ½–¾ dcl. salt per 1 L. water — and simmers for 20 minutes.
Take it up, let it cool and place it in an ovenproof dish; pour the following sauce over it.
Melt the butter, stir in the flour, thin with the cream, bring to a boil, salt to taste, add the cold water and the wine.
The dish is put in the oven and gently bubbles for 15–20 minutes.
Just before serving, the finely chopped parsley is sprinkled over.
