When the roe is to be fried, first wrap it in a piece of cloth, put it over the heat in boiling, salted water, and boil for half an hour.
Take it up, and when the roe is cold, cut it into slices, dredge in flour and fry light brown in lightly browned butter or fat.
N.B. If the roe is firm enough to hold together when sliced once the skin is removed, it is best to take the skin off.
For the roe cakes, clean the skin from the roe. About 0.5 kilo of roe is mixed with 1 tablespoon wheat flour, 1 tablespoon ground rusk, 1 egg, ginger and salt to taste, formed into round cakes and fried in a pan in butter or fat.
