The soaked herring, freed of skin and bones, is cut into narrow strips on the diagonal.
The butter is melted, the chopped onion is added, and after a couple of minutes the flour is stirred in, thinned with the stock and the cream; boiled down to a smooth sauce, which is strained and the finely chopped parsley stirred in.
In the bottom of a greased ovenproof mould, slices of the boiled potatoes are placed; over this a little of the sauce is poured, then the hard-boiled, chopped egg yolks, then the herring.
The mould is thus filled in layers. The last layer should be sauce, which is sprinkled with the grated cheese and drizzled with the melted butter.
Bake in a hot oven 15 min.
