Wash, peel and cut the apples into small pieces, remove the cores and cook them to a purée with the sugar and just a little water.
Rinse the rice and boil it tender in water in which you have first simmered the apple peels. Stir carefully and pour it out to cool once the rice is tender.
Lightly mix the apple purée and the rice together, mound it on a dish and serve with milk.
If using dried apples, wash them, soak them in water overnight, and set them to boil in the same water together with the rice and sugar; cook until everything is tender. For 200 g of dried apples use 2 litres of water.
