How much water to add depends partly on how dry the fruit is, partly on taste, and partly on how economical you wish to be.
If dried fruit is used, reckon 1/4 to 1/5 in proportion to fresh. The amount of sugar depends on how sour the fruit is (from about 1/2 to 1/5 of the fruit's weight).
Reckon 60 g of cornstarch per litre of strained juice for fruit pudding. If not strained, which is usually unnecessary, use 40 g of cornstarch. Of potato starch or sago flour, use 75 g per 1 l of juice.
Whisk in the thickening once the fruit is cooked through, then give it a brief boil again.
