Rub the boiled potatoes through a colander or potato ricer, stir in the melted butter, pepper and the whisked egg; salt to taste.
Grease a small mould — not too tall; place a layer of the potato mixture in it. Drizzle over with about 1 teaspoon of melted butter, sprinkle with rusk crumbs.
Bake in the oven for a quarter of an hour, or set over a spirit burner, and with a glowing, well-wiped knife, stroke over the surface so the gratin browns somewhat.
N.B. Use for this any leftovers found in the house of salt or fresh, boiled or fried meat. It is a good little dish and gives an excellent opportunity to use up leftovers.
