String freshly picked beans and boil until tender in as little water as possible; pour off the water.
Once they are cold, mix them with half of the lettuce, finely cut, the parsley and the onion.
The sauce: The hard-boiled egg yolk is rubbed fine with the raw one, add the oil or cream, salt, pepper, sugar and, if you have it, lemon.
Mix 3/4 of the sauce well with the salad using two forks. Arrange on a mound covered with whole lettuce leaves.
Garnish the salad with the boiled, finely chopped egg white, the boiled, finely chopped beetroot; the rest of the lettuce finely cut and the rest of the sauce dripped over.
NB. The beans should boil in as little water as possible and without a lid, as the colour is thereby better preserved. To keep the colour fresh, both here and when boiling salted, soaked beans, you may add potash, as much as 1 pea to 1 liter.
If you have no lemon, you may well leave it out, or take 1 drop of lemon dissolved in 1/2 teaspoon of water.
Cut lettuce leaves lengthwise for garnish.
Boil beetroot with the skin on.
