The meat cut from the saddle or leg is sliced and shaped into cutlet form, pounded, peppered, salted, turned in egg, then in rusk crumbs.
The butter is lightly browned, and the venison cutlets are fried in it.
Up to 1 dcl of stock or water may be poured into the butter after the meat is browned, and the meat simmers gently in this for 20 minutes.
Just before serving, the cutlets can be topped with 1 teaspoon of redcurrant jam, or half a cooked apple, peeled lengthwise with a paring knife.
