The pork fat is cut into small cubes and browned together with the butter; the pork is removed, and the well-floured pieces of meat are browned in the butter.
Any leftover flour is stirred into stock boiled from venison bones, or, failing that, water is added, and it is brought to a boil.
Stir in the browning, red wine or jam, pepper, salt and the finely chopped onion, along with the browned pork cubes.
It all simmers gently for up to 1½ hours. Serve with fried potatoes.
When plating up, the meat is arranged around the dish, and the centre is filled with some kind of vegetable fricassee.
NB. Instead of fresh raw meat, you can use leftover venison roast for this dish, cut into slices and warmed in the sauce without boiling.
