The meat is cut into small squares. The butter is browned, the chopped onion, pepper and flour are stirred in, thinned with the stock, and brought to a boil.
The meat is put into the sauce, and it simmers gently for ¼ hour.
Serve with fried potatoes, plus one poached egg per person; the eggs are laid over the meat, which is served on a flat dish.
NB. Venison should be laid overnight in water and vinegar — 1 dcl vinegar per 1 litre of water. Venison shoulder can well be used for a number of these dishes, which will then come out somewhat cheaper.
