Wash and trim the venison shoulder, chop it into suitably sized pieces and wipe them dry with a cloth.
Roll each piece in flour mixed with a teaspoon of salt, and brown them in good frying fat.
Pour over a litre of water, a spoonful of sugar and 4 whole cloves, and cook under a lid until the meat is quite tender.
In a steam pot it is done in an hour to an hour and a quarter, otherwise reckon at least 2 hours (the ragout must be well cooked through).
Add vinegar to taste, and check whether it needs more sugar.
