Put the berries in a crock and take just enough water to cover them.
Let them stand in this for a couple of days and nights, boil the whole really well over brisk heat and pour it into the berry straining-cloth.
Stretch the cloth over 4 supports and set a dish underneath to collect the juice; a berry cloth is more practical than a woollen bag.
When all the juice has drained off, it is boiled anew with sugar, 0.25 kilo sugar per litre of juice.
You can also prepare the juice so that whatever is left in the berry cloth can be used in lingonberry jam or in apple sauce; then the berries must not be doused with water but pounded, and the juice strained and boiled.
