For 0.5 kg of fruit use only 125 g of crushed loaf sugar, boiled into a thin syrup with 0.125 l of water, and cook the fruit in this.
While this is going on, light a small piece of sulphur strip, and place the previously cleaned, clear and completely dry jars upside down over it so they fill with the sulphur fumes.
As they fill, set them down bottom-up so the fumes cannot escape.
As soon as the fruit is cooked, lift it out of the syrup and put it into the sulphured jars. Boil the juice for a few minutes and pour it at once over the fruit.
The jars, which must not be completely full, are sealed as follows: press 2 to 3 small, dry, very thin pine sticks, of a length to suit the width of the jar, crosswise down into the jar, but ideally not touching the fruit.
Light a small piece of sulphur strip about the size of a 10-øre coin and lay it down on the sticks; but only once the sulphur strip is burning well, seal the jar as quickly as possible with parchment paper that, together with the string, has been dipped in boiling water and then well dried.
The canned goods should be kept in a dry, dark and slightly cool place, especially during the first period. The main thing is that the jars are sealed completely airtight.
