The meat, preferably from the leg, is larded with strips of pork dipped in a mixture of the finely chopped onion, pepper, ginger, cloves and salt.
The meat is dredged in flour, browned in the browned butter, the boiling water is added, and it simmers 1 hour covered, after which it is taken out; the stock is strained.
Sauce: Butter and flour are browned slowly, thinned with ½—¾ l of the strained stock; simmered 10 min., and vinegar and sugar as well as salt added to taste.
NB. The spices that fall off the pork are rubbed into the meat.
