Cut the meat from the shoulder small and grind it once; divide into 12—15 equally large pieces.
Beat each piece out thin on a moistened board, cover with finely cut beef marrow, finely chopped tallow or boiled strips of pork. Mix the spices and sprinkle a little of this on each piece.
Roll up tightly, with no cracks, for then the marrow seeps out during browning; tie up — if necessary — and brown in butter.
For the sauce, brown the butter and flour slowly and thin with the stock, bring to a boil; put the "fugler" into it when they are browned, and let simmer under a lid for 15 min.; add the sour cream, boil again for 5 min.
