Chop up the bones, sinews and meat shanks, put them over the heat with cold water, roots as above, and bouquet garni and salt.
Cook 4—5 hours.
Cook a second batch of stock on the bones as well, but then use 1 l less water.
A very little caramel coloring may be added.
After the stock-cooking is finished, the meat is scraped from the bones while still warm, ground once, and used for various dishes such as hachis pudding, chopped-meat pudding, chopped-meat sausage, cakes, etc.
