Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Walnut cake (Nusstorte) II from «Kogebog for skole og hjem» (1900): a flourless nut cake of egg yolks beaten with sugar, coarsely crushed walnuts and stiffly whipped egg whites. Baked ¾–1 hour, served cold with cream. Serves 4–5.

«Nusstorte» — den andre valnøttkaken i boken (1900) — er en enkel, melfri nøttekake bygget på eggedosis, grovstøtte valnøtter og stivpiskede hviter. Serveres kald med krem.
Prepare the walnuts
Crack the walnuts, remove the kernels and crush them coarsely.
Beat yolks and sugar
Beat the egg yolks with the sugar for ¼ hour until pale and airy.
Fold together
Add the coarsely crushed walnuts and the stiffly whipped egg whites.
Bake
Pour the batter into a greased and dusted mould and bake ¾–1 hour.
Serve
Serve cold with whipped cream. Serves 4–5.
