Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

A sweet soup made on cultured soured milk from Erken and Steen's «Kogebog for skole og hjem» (1900): 4 l soured milk thickened with 100 g rice flour, with blanched almonds and raisins pre-boiled in sugar and water, whisked to the boil; seasoned with lemon and cinnamon.

Tykkmelksuppe er en søt, fyldig suppe på sur tykkmelk eller kjernemelk med mandler og rosiner, en festligere variant blant melkerettene i Henriette Schønberg Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Den konstante vispingen under oppkoket hindrer at den sure melken skiller seg.
Boil the raisins
Boil the cleaned raisins together with the sugar and water for a quarter of an hour.
Mix in the flour
Stir the rice flour smoothly into the soured milk (or buttermilk).
Bring the soup to the boil
Put the milk mixture over the heat together with the blanched, finely chopped almonds and the cooked raisins. Whisk constantly as the soup comes to the boil, and let it boil for a couple of minutes.
Season
Lift the pot off the heat. Season with lemon and cinnamon if you like. Serve hot.
