Drying fruit such as apples, pears, cherries, blackcurrants and so on is done on the same kind of trays as mentioned above and at a temperature of about 70°.
Fruit such as apples is peeled and cut into slices. Pears are parboiled and peeled. The fruit is dried until no more juice appears.
Bilberries are first air-dried for 3 hours, then dried in the oven at 60°; duration: until they are shrivelled and hard.
Store like dried vegetables, or else tightly packed together in boxes.
