The cores are punched out, the apples are peeled and cut crosswise into slices barely 1 cm thick, and placed as you go into water with 1 teaspoon of salt or a little dissolved citric acid per 1 l of water.
Lift out with a slotted spoon, place in an enamelled pot and steam for 2 minutes, then quickly and as hot as possible lay in a single layer on the rack, place on the lowest shelf, and keep the temperature at 90 to 100° C (210 °F).
If you dry them inside the oven, and there is no vent in the oven door, the door must be left slightly ajar so that the raw steam can escape.
The apples are finished drying when no juice comes out when you squeeze them. The apple peel is used for jelly, juice or fruit butter.
