Tekake (thekage) er en klassisk formkake til kaffe- og tebordet, myk og mandelduftende. Erken og Caroline Steens 1900-versjon deler egget, visper plommene lenge og vender inn stivpiskede hviter for en luftig krumme.
Whisk yolks and sugar
Whisk the egg yolks and the sugar together for half an hour.
Stir in butter
Cream the butter until white and blend it into the egg mixture.
Add flour and almond
Add the blanched, finely chopped almonds and the flour that the baking soda and cream of tartar have been stirred into. Finally stir in the stiffly whipped egg whites.
Bake
Pour the batter into a greased and floured tin and bake in a good, hot oven for about one hour.
