Wash and clean the sorrel, blanch it, set it over the heat in the boiling, salted water; when the sorrel is cooked, press out the water well and chop the sorrel fine.
Melt the butter, stir in the flour, thin with the milk, bring to a boil, add vinegar and sugar.
Sorrel goes excellently with fried fish, not least with mackerel, and with all cured meats etc.
Dandelion, nettle and goosefoot (fat-hen) are creamed in the same way.
