Wash and dry the meat, then place it in a crock or dish with the peppercorns and the bay leaf.
Bring the vinegar and water to a boil together in an enamelled pot and pour it boiling hot over the meat; set the crock in a cool place with a thin, clean piece of cloth over it.
In summer it may lie like this for 2 days, in winter for 4 days. If the liquid does not cover the meat, it must be ladled over from time to time, and the meat turned once each day.
Brown the margarine and brown the meat in it on all sides, then dredge it with flour, and once it is a little browned, add the salt and the cleaned, sliced onion; pour on enough boiling water to reach halfway up the meat; braise gently under a lid in the same way as in the preceding recipe.
